In the vineyards: The Greek variety of Malagousia combined with the world famous Chardonnay. The fruity characters of Chardonnay with pineapples, bananas, apples and pears married uniquely with the more ripe characters of peach, apricot and orange of Malagousia. Chardonnay’s acidity softens from the pleasant mouth feel of Malagousia. A fragile balance creating a delicated wine.
Vinification: Harvest early in the morning and transfer of the grapes to the winery. Cold maceration for Chardonnay and Magagouzia for 8 hours in temperature of 10oC. Control of the temperature of alcoholic fermentation in 14-17 o C and battonage at the end of it.
Few words about Chardonnay: Chardonnay is a green-skinned grape variety, used to make white wine. It probably originated in the Burgundy wine region of eastern France but is now found anywhere that grapevines can be grown, from England to New Zealand. It is vinified in many different styles, from the elegant, "flinty" wines of Chablis (wine) to rich, buttery Meursaults and New World wines bursting with tropical fruit flavours. It is an important component of many sparkling wines around the world, including Champagne.
Malagousia originated in the region of Nafpaktos in western Greece. It is found mainly in Macedonia and is now cultivated in some vineyards in Attica and the Peloponnese. It is an especially aromatic grape leading to elegant full bodied wines, with medium acidity and exciting aromas of exotic fruits, citrus, jasmine and mint.
Comments from the winemaker: Malagousia is a rare indigenous white variety; very sensitive and hard to cultivate which a few years ago, had almost disappeared from Greece. Its unique characters have gained our attention and we couldn’t but plant it in one of our vineyards. Among with Malagousia at a chalky site of the same vineyard we planted Chardonnay searching for complexity and fullness for the blend of these two varieties.
Food Suggestions: Creasy fishes, seafood pasta, white meat, salads and cheeses Best served at a temperature of 8-12oc.
Since 1995, when the old traditional treading tank was replaced by a contemporary winery, following the demands of modern times, Palivou Estate began its new, extremely dynamic era.
In a place, which has been characterized as Name of Origin for what is probably the most important Greek red variety AGIORGITIKO, Palivou Estate owns one of the two largest vineyards in the zone of NEMEA. More than 300 stremmas (area equal to 1000km) planted mostly with AGIORGITIKO, but also with Rodites, Malagousia, Chardonnay, Merlot, Cabernet Sauvignon and Syrah can lavishly offer wines of quality.
