Other technical characteristics: The grapes are handpicked and brought to the winery in small plastic crates. Following careful sorting of the grapes, they are fed into the destemmer where the stems are separated from the grapes. After this they are fed into state-of-the-art pneumatic press where they are gently pressed at low pressures. This is followed by debourbage and then after 16 hours the must, which has cleared naturally, is collected. No pumps are used during processing of the grapes. Alcohol fermentation takes place in double-walled, stainless steel tanks at a fully controlled temperature of 16°C.
The wine matures with his muds for around 8 months. It follows cooled, filtered and bottled on site at Domaine Evharis.
Taste: A golden hue with a refined bouquet of grapefruit and exotic fruit combination, unctuous, with a full body and rich, lingering aftertaste.
Evharis estate agricultural activities relate to the production and bottling of different varieties wines under the seal Evharis. Evharis comprises of 400 sq. meters in the foothills of the Geranian mountains. It lies between two seas, the Corinthian and Saroniko at an altitude of 380-400m. The estate is less than one hour from the noisy city of Athens.
Planting of vines on the estate began in 1988. Up to now, the owners supervise with dedication all aspects of the wine production. The owners affection for the cultivation of the vines and the wine they produce, prompted them to give their name initials in the estate considering them as their mental children (Eva - Maria Boehme and Haris Antoniou). The wines of Evharis estate have gained the love and acceptance throughout the world for their quality and their flavor, something that is confirmed by the numerous awards with which they win each year in competitions held in Greece and abroad.
The Evharis wines are Greek wines of a high quality. They are certified with HACCP and ISO and also for the last four years with the System of completed management that testifies the natural cultivation, the environment protection and the consumer friendly goods production.
