Type: Naturally Sweet Wine

Classification: Wine with Appellation of Superior Quality «Santorini».

Varietal Composition: Assytriko 75%, Aidani 25%

Vinification techniques: Classic white wine vinification from sun dried grapes (10-12 days). Aging in old oak barrels for a minimum of 24 months.
Vinsanto is the most genuine descendant of the “passon oinon”, as the sun dried wines were called in antiquity. During the Middle Ages the ancient volcanic Thira was renamed as Santo Erini – Santorini and thus the wine took the name Vino Santo – Vinsanto, thus declaring its place of origin. Thus, the name is a «historical name of appelation», one of the few still in existence.

Production: 10,000 bottles (0.50lt).

Technical data: 9% vol, residual sugar: 300 gr/lt, acidity: 8.5 gr/lt.

Organoleptic characteristics: Bright orange-golden color. Rich and complex aroma with dominant scents of dried and sugared fruits. Exquisite structure, acidity and finesse, with a strong aftertaste.

Aging potential: Limitless.

Serving Suggestions: Strong cheese and dried fruit served at 11° C.

Location of vineyard: Santorini, Oia (in the northern part of the island).

Soil: Consists of fragments of black lava, volcanic ash and pumice. It is classified as sandy for purposes of its mechanical properties. It is poor in organic substances and nitrogen, with minimal clay and a negligible CaCo3 content.

Age of vines: Over 50 years.

Yield in hl per hectare: Due to the sun drying technique, is 5 - 7hl.
Harvest: Early to mid August.

The company was founded in 1991, under the name SIGALAS WINERY Ltd. The winery was initially located in the traditional canava of the Sigalas family. In 1998, a new production, bottling and aging facility was constructed, located in a privately owned area. Since then, and after continuous investment in modernization and expansion of the facilities, the company has a processing and bottling production capacity of 300,000 bottles annually.

On the plain of Oia, in Santorini, and more specifically in Baxedes area, the winery of DOMAINE SIGALAS can be found. Here, the most vibrant variety of the Mediterranean zone, the Santorini Assyrtiko as well as the Aidani, Athiri, Mandilaria and the Mavrotragano are put to the best use possible, and with the proper respect to their organoleptic characteristics, the quality wines are produced which receive acclaim in international competitions, both in Greece and abroad.

Today, DOMAIN SIGALAS continues to implement its growth plan, based on the three principles on which it was created: a creative relationship with the traditions of the island of Santorini, technical savvy and quality.
