Variery composition: 100% Syrah
Location: The south-facing slopes of mountain Pangeon that give the maximum fruit for the acidity required.
Soil: The stony soil is one of the most important factors, leading to the high quality of this excellent wine.
Climate: The climate is affected by the fresh sea breeze of Aegean Sea and it influences the production of the grapes. Fresh dry summers, with cool nights.
Tasting Characteristics: A new style of rose wine, different from the rose wines we’ve known until today, is presented from Ktima Biblia Chora in Kokkinochori Kavala. A wine with complicated flavor of red fruits and notes of barrel, extremely rich in taste and with lasting aftertaste. It is disposed in very few bottles only.
Wine Making: Ovilos Rose is produced from the variety Syrah (just like the Biblia Chora Rose), but distinguishes for the different way of winemaking, compared to the rest rose wines from all over the world. After the effusion of the colour and the flavour from the grapes, the must is put in French oak barrels, where it is kept for fermentation and ageing.
Serving tips: Best enjoyed cold, at 10-12oC.You can drink it as an aperitif, or you can engoy it through out a meal. It perfectly matches with cheese, roast lamb or beef, poultry, chilly and curry dishes.
Biblia Chora winery is located in the small town of Kokkinochori directly on the Aegean coast, close to the trading centre of Kavala in the foothills of Pangeon mountain in Macedonia, northern Greece. After several years of preparatory work, the estate was founded in 2001 by two Greeks, Evangelos Gerovassiliou and Vassilis Tsaktsarlis. Gerovassiliou studied agricultural sciences in Thessaloniki and oenology in Bordeaux. Tsaktsarlis studied chemistry in Thessaloniki and then viticulture and oenology in Bordeaux.
The winery building has been built in the style of a Bordeaux chateau. Varieties planted include the indigenous varieties Assyrtico and Agiorgitiko, as well as the international varieties Cabernet Sauvignon, Chardonnay, Gewurztraminer, Merlot, Sauvignon Blanc, Semillon and Syrah. Organic winemaking practices are implemented, and the estate is a certified organic producer.
The winery is being built in stages, allowing vinification to preceed its overall completion. It will combine the best features of chateau and villa, with living space on the upper story and a courtyard above the cellars separating the front from the production area in the rear of the structure. Architecturally it was impressive even in its poured-concrete phase. Winemaking, meanwhile, is the number 1 priority.
